French Duck press made of solid Brass

Duck is supposed to be served on special occasions and hence they have special problems too! Hence the Duck press, which is a culinary tool handcrafted in Normandy, France, is made of solid brass and is forged using a method developed a century back. It is used in fine restaurants during the preparations of Canard de la presse which means pressed duck. In the traditional method, the breast and duck meat is removed from a slightly roasted duck and the duck bones are placed in the bowl of the press. The handle is rotated clockwise to remove the juices and marrow on the bone to prepare a glaze which is later used to spread over the breast and legs. The duck bones are placed below the brass duck feet and the wheel is used to grip and turn.
